2 lbs lean beef
1/4 cup butter
1 onion, chopped
1 large can mushrooms, sliced
juice of 1 lemon
2 Tbs flour
1/2 cup tomato juice
1/2 cup beef stock
salt and pepper to taste
1/2 cup sour cream
3 Tbs sherry
Cut beef into bite sized pieces and sprinkle with lemon juice and dust with flour. Saute onions and mushrooms in butter until softened. Remove from pan. Add beef and brown. Deglaze pan with sherry. Add onions, mushrooms, juice, stock and seasonings and cook 5 minutes. Stir in sour cream and heat through.
Serve over wide noodles.
